Yoghurt Pancakes

I tried this yoghurt pancakes recipe but I adapted it to have more yogurt so it used a whole single serve tub. It makes thick and fluffy pancakes :)

 

  • 2 Large Eggs
  • 1 Cup Greek Yoghurt (single serve tub)
  • 1 Cup Milk
  • 1 Cup Wholemeal Flour
  • 1 Cup White Flour
  • 1 Teaspoon Vanilla Essence
  • 5 Teaspoons Baking Powder
  • 2 Tablespoons Butter + extra for cooking

 

Cauliflower Pizza Base

I tried making this cauliflower pizza and it turned out fairly well. Next time I’d like to try modifying it as follows as the flavour could do with a boost:

1 Large Head of Cauliflower Chop into large florets Add to Food Processor and pulse until fine consistency (batch if necessary) Add Eggs and pulse to combine into mixture Spread mixture on tray 0.5 cm thick Bake 20 minutes until very golden. Add your choice of toppings and Bake 5-10 minutes.
1 Cup Cheddar Cheese Grate
1 Large or 2 Small Cloves Garlic Peel
1 Small Pinch Salt
1 Small Pinch Pepper
Food Processor
2 Large Eggs  –  –
Sheet Baking Paper Line Baking Tray with Baking Paper
Baking Tray
220 Degrees Celsius Oven  –  –  –  –
Your choice of toppings (inc Mozzarella cheese!)  –  –  –  –  –

Beetroot Burgers

  • 1 medium onion
  • 2 cloves garlic
  • 1 can chick peas
  • 1 tbsp olive oil
  • 1 large can of sliced beetroot
  • 1 sachet tomato paste
  • 1/2 teaspoon cinnamon
  • 1/2+ Cups Oats

 

Directions

  1. Chop onion and garlic and fry with olive oil in a pan. Then add chick peas and continue to fry until golden.
  2. Meanwhile drain can of beetroot and reserve several large slices for burgers.
  3. place the rest in a microwave safe bowl and cook on high for 3-4 minutes.
  4. Remove and drain any liquid.
  5. Place the following ingredients into the food processor:
    1. Beetroot
    2. Chick Pea Mixture
    3. Tomato Paste
    4. Cinnamon
  6. Pulse until a thick paste forms (don’t over do it).
  7. Place mixture in a bowl and stir in 1/2 cup of oats.
    1. Add extra oats if the mixture is too sloppy.
  8. Refrigerate mixture for 15 minutes.
  9. Form into 6 burger patties.
  10. Brush or spray with olive oil.
  11. Then BBQ.
  12. Add to a burger bun with your favourite fillings.
  13. Enjoy!

 

Uncooked Beetroot Burgers

Beetroot Burgers

Coriander, Sweet Potato and Corn Fritters

Recipe makes four largish fritters suitable for breakfast or lunch.

Equipment:

1 Large Bowl (Microwave Safe)

1 Small Bowl

1 Microwave

1 Grater or String Peeler

1 Chopping Board

1 Chopping Knife

1 Large Frying Pan

4 Dinner Plates

Ingredients:

1 Large Sweet Potato

2 Eggs

60 ml Olive Oil

2-3 Spring Onions

1 Corn Cobb or 300 gram Can Corn Kernels

1 Large Bag Lettuce

1/2 Bunch Coriander

2 Avocado

1/2 Teaspoon Ground Cayenne or Black Pepper

1 Small Clove Garlic

Bottle or Jar of Mayonnaise

Variation: 8 Rind-less Rashers of Bacon

Method:

    • Grate the Sweet Potato into the Large Bowl.
    • Place in the Microwave for 3 minutes on High.
    • Finely chop the Spring Onion.
    • Chop the kernel off the Corn Cobb.
    • Finely chop the coriander stalks.
    • Coarsely chop the coriander leaves.
    • Chop the avocado into 2 cm cubes.
    • Finley chop the garlic clove.
    • Place the frying pan on a high heat
    • Add the following ingredients to the large bowl of Sweet Potato and stir to combine
      • Olive Oil
      • Chopped Spring Onion
      • Corn Kernels
      • Chopped Coriander Stalks
      • Eggs
      • half a teaspoon of cayenne or black pepper
      • Garlic
    • In batches of 2 or 3, spoon saucer sized portions of the sweet potato mixture into the frying pan.
      • Cook for 3 minutes each side
    • Place a bed of lettuce larger than the size of the fritters on to each plate
    • Add the following ingredients to the small bowl and stir to combine
      • Cubed Avocado
      • Chopped Coriander Leaves.
    • Variation: Cook bacon
    • On each plate, place a fritter on the center of the bed of lettuce
    • Top with the Avocado and Coriander Mixture
    • Variation: Top with two pieces of Bacon
    • Place a large dollop of Mayonnaise on top
    • Enjoy

No Knead Bread

ingredients

 

  •  3 cups flour
  • 2 teaspoons quick yeast
  • 1 teaspoons salt
  • 2 cups water

directions

  • combine and rest for 4 hours in warm place (top of fridge?).
  • coat with flour/wholegrains.
  • place in cold/cool cast iron pot.
  • then turn on oven to 200 deg celcius.
  • cook in pot for 45mins with lid on.
  • Increase oven to 250 deg celcius.
  • remove lid cook for further 15mins.

Muesli Bar Recipe

Oven  Pre-Heat Oven to 200c place in oven for 30 Minutes Remove From Oven Cool for 1 Hour
Large Bowl  Combine Combine Combine wrap mixture into rolls with baking paper
4 Cups Rice Bubbles
2 Cups Rolled Oats
1.5 Cups Mixed Nuts
1.5 Cups Mixed Seeds
2 Cups Protien Powder
1.5 Cups Water
1 Tablespoon Honey
1 Teaspoon Cinnamon
1 Teaspoon Vanilla Essence
Baking Paper

Irish Cream Fudge

Materials:

  • Baking Paper
  • Baking Tray
  • 500g Milk Chocolate
  • 400g Sweetend Condensed Milk
  • 1/2 Cup Irish cream Liqueur

Procedure:

  1. Line baking tray with baking paper
  2. Mix chocolate and condensed milk over a low heat until combined
  3. Add Liqueur and mix until combined
  4. Pour into lined tray
  5. Refrigerate for 6 hours/overnight.
  6. Cut and serve
